This lot is picked by farmers who are part of the Waylan Origin association. A program that provides training and education to young coffee farmers. This directly improves the quality of the coffee, forms new connections with international markets and empowers younger generations.
The farmers are trained to harvest the cherries at peak ripeness to ensure sweetness and flavour. This lot then has a 72-hour anaerobic fermentation in barrels before being sun-dried.
A well-balanced brew with a bright sweetness of ripe strawberries and red cherries, rounded off with a silky mouthfeel.
Omni roasted, this coffee will work in pretty much any brew method you could throw at it.
Our recommended 1:2 espresso recipe: 18g in, 28-34 seconds.
