The Tinamit Tolimán Agricultural Cooperative, or Tinamit, is a group of Kaqchikel coffee growers from San Lucas Tolimán, Guatemala. Formed in 2016, the cooperative helps farmers work together to grow and market high-quality coffee.
Today, Tinamit has 26 members who primarily produce washed coffees, while also experimenting with natural and honey processes. They producers pay special attention to their role in preserving the remarkable natural beauty of the lake, and strive for environmentally sustainable production.
Each harvest is hand-picked and brought to the cooperative’s mill the same day. The cherries are carefully checked for full ripeness before being sorted, depulped, and dried in the sun for 5-6 days. Such care has resulted in consistently excellent quality.
Tinamit offers a vibrant red-purple fruit sweetness and delicate rose aroma, complimented by a luxuriously fudgy mouthfeel. Elevated and rich without being overpowering, it’s an exceptionally refined cup.
