At La Huaca, the coffee cherries are picked only when fully ripe, with Clever Delgado enforcing strict quality standards during harvest. The cherries then undergo a 72-hour fermentation, followed by multiple washings to remove the mucilage. Afterward, they are dried for approximately 15 days.
In recent years, Clever has significantly improved the quality of his coffee by maintaining rigorous picking standards and extending the fermentation process beyond the usual timeframe.
