A particularly special coffee selected by our very own Head Roaster Jess.
During an origin trip to Colombia with our partners at Cofinet, Jess had the chance to follow the cherry’s journey from pick to pour, experiencing first-hand the skill and dedication behind every bean.
After cupping through numerous brews from local producers, this particular coffee literally sang out and declared that it shall be returning home with her.
Coming straight from Diofanor Ruiz’s farm, La Divisa, each bean has been lovingly hand-picked to ensure only the ripest cherries make the cut, followed by a meticulous hand-sorting to weed out any imperfections. After that, it’s off to be sun-dried on raised beds under carefully controlled conditions, bringing it to absolute perfection.
The result is a beautifully balanced coffee that left a lasting impression, and one that Jess is excited to share with you.
A wonderfully rich coffee with juicy notes of purple fruits, a gentle booziness and a sweet citrus back note. Delicious both black and white!
