The area, known as the Meseta de Popayán, is sheltered by the Andes mountain range, which creates stable climate and altitude conditions. This consistency helps produce high quality cherries with beans that produce well-rounded, bright and juicy cups.
A perfect balance of comforting and vibrant, Popayán is extremely forgiving in all extraction levels.
Brewed for a shorter time, this coffee is fresh, juicy and zesty.
Brewed for longer and it becomes more balanced, with sweet caramel notes and a smooth body.
