Las Palomas is a six-hectare farm, owned and operated by third-generation family members Daniel José and María Isabel Monge García. During harvest, they employ two full-time workers and welcomes about 25 seasonal pickers who rotate between Las Palomas and neighbouring farms.
For this lot, cherries were delivered to the mill and processed the same day, then dried and fermented for seven days. They are carefully sorted as drying progresses, ensuring exceptional quality, reflected in an 87.5 cup score.
