
Caturra Chiroso is a relatively lesser-known variety. “Chiroso” coming from the slang word in Colombia for something that is slightly elongated. And more mystifying, Caturra Chiroso has been found to more genetically linked to Ethiopian landrace varieties rather than Caturra. But how that mutation happened is still unclear.
Recently, this mysterious variety has been making itself known for its high yields and desirable sensory profiles. With higher qualities being up there with other competition worthy varieties with characteristics of being well structured, floral and silky. We just had to buy it in.
As with all high-grade fully washed coffees, only the ripest cherries are picked before being de-pulped. The mucilage is then washed before going into a 14 hour controlled fermentation process to enhance their sweetness and acidity. Lastly, the beans are sun dried on raised beds for 10-12 days.
A multi-dimensional cup with notes of juicy blackcurrant. More lime zesty as an espresso, and green apple as a filter. A long toffee finish and jasmine florals on the nose.
